Warm beets and mushrooms salad

Here are the ingredients:

  • 3 suitableĀ beets
  • 500 g fresh mushrooms
  • 1 onion
  • 2 cloves of garlic
  • 1 lemon
  • parsley
  • salt and pepper
  • oil

Here is how you cook it:

Wash beets without peeling and put them in the preheated baking oven. Leave them for about 60-70 minutes or until they show that they have softened. Leave them to cool and remove the peel, then slice them or cut them into cubes.
Put two tablespoons of oil in a pan and add finely chopped onion until golden then put the garlic and the sliced mushrooms. Leave them on the fire until the juice drops. Put salt and pepper at the end. In a bowl, put the beets, mushrooms, lemon juice, salt and pepper. Mix and sprinkle with parsley. Leave a few minutes for the flavors to mix and then serve.
