Wild rice and roasted vegetable salad

Wild-Rice-SaladIf you are in a hurry and you are looking for a healthy and nourishing salad, we propose you try this recipe.

Ingredients:

  • 150 g wild rice
  • 1 eggplant
  • 2 zucchini
  • 2 tomatoes
  • 1 red bell pepper
  • 2 cloves of garlic
  • ½ onion
  • 1 chilli
  • 1-2 stalks of apio/ celery
  • rucola
  • lime juice
  • thyme / oregano
  • soy sauce (optional)
  • salt

Here is how you cook it:
Cut the zucchini, eggplant, tomatoes and peppers. Put vegetables on the hot grill with onions, garlic cloves and browned them on each side.
The wild rice must be boiled in 450 ml of water with a teaspoon of sea salt. Mix only towards the end, when the rice has absorbed all the water. Give it aside and sprinkle a little thyme and dried oregano. Aerate it with a fork.
Serve the wild rice with cooked grilled vegetables, thinly sliced chilli, lemon juice or soy sauce (optional).
