Winter is still here, so we must stay strong and healthy by eating well, exercising and drinking water and hot teas. When it comes to food, some of the best things you can eat are fruits and vegetables.
With them we can make delicious salads that are also very nourishing. Here are two winter salad recipes you must try!
1. Carrots and raisins winter salad:
- 4-5 carrots
- a red onion
- a teaspoon cumin seeds
- a handful of white raisins
- two tablespoons balsamic vinegar
- two tablespoons of oil
- salt, pepper.
→ Put the raisins in warm water to re hydrate.
→ Clean and grate the carrots.
→ Clean and finely cut onions.
→ Mix well the onions, carrots and the raisins drained of water.
→ In a bowl mix oil, vinegar, salt and pepper. Add the sauce over the carrots.
→ Add cumin seeds and mix well.
→ Serve salad immediately!
Trick: You can replace the cumin seeds with other flavor to your liking. Put more pepper if you want a spicy sauce and add a little honey if you want a fresh salad.
2. Celery and walnuts winter salad
- a large celery root
- 100 grams of nuts
- 50 grams of raisins
- 4 apples
- lime juice
- oil (coconut oil is ideal, but any kind of oil is good)
- salt, a tablespoon of honey.
→ Put the raisins to soak in warm water.
→ Clean and celery and add immediately the lemon juice,so it will not oxidize.
→ Cut apples slices or pieces and mix them with grated celery.
→ Add the raisins and the crushed nuts.
→Put everything in the refrigerator in a covered container.
→ Prepare a sauce of oil, honey, salt and a tablespoon of lemon juice.
→ Add the sauce just when serving salad, and don’t mix.
